I got a steering wheel tray for someone in a similar situation. It rests on the wheel and has a spot for food, a cup, and a phone. It’s super easy to store and really convenient for eating or working in the car.

You could also add an emergency kit with essentials like a heat blanket, water bottles, a flashlight, and a mini gas can. It’s good to be prepared.
